Salt distribution is equally important. Poor mixing can create portions with different salt levels, affecting taste, moisture migration, and microbial stability. Maturation cannot completely correct uneven fermentation or salting.

Why Do Drying and Packaging Matter?

Drying controls the final texture and storage performance of fermented black beans. Beans dried too quickly may become hard on the surface while retaining more moisture internally. Insufficient drying can produce sticking, clumping, and greater sensitivity to storage humidity.
