Primary fermentation creates the flavor foundation, while maturation makes the aroma more integrated. Slow enzymatic and chemical reactions continue after salting, reducing rough notes and allowing savory, earthy, slightly sweet, and fermented characteristics to become better balanced.

Drying must be controlled during this stage. Rapid or excessive drying may reduce aroma intensity, while insufficient drying can leave the product sticky and less stable. The goal is to retain enough moisture for desirable texture without creating conditions that weaken shelf-life performance.

Why Can Aroma Change During Storage?

The aroma of fermented black beans continues to respond to oxygen, heat, light, and humidity after packing. High storage temperatures accelerate chemical reactions and may cause desirable volatile substances to disappear. Oxygen entering through unsuitable packaging can also produce stale or oxidized notes.

Supplier evaluation should cover raw material consistency, fermentation records, moisture control, sensory standards, packaging performance, microbiological testing, and batch traceability. Retained samples from each lot can help investigate later differences.

A stable fermented aroma is the result of coordinated biological activity and manufacturing control. Standardized cooking, fermentation, maturation, drying, and packing allow the ingredient to maintain its characteristic profile while performing consistently in sauces, marinades, pastes, and prepared foods.
