Maturation allows enzymatic reactions to continue at a slower rate. Amino acids, peptides, organic acids, and aroma substances become more balanced, producing the deep savory character associated with fermented black beans. Depending on the specification, ginger or dried citrus peel may also be incorporated to create a differentiated aroma profile.
